It's the time of year when warming winter treats are in order. These easy to bake apple pies are quick to make are the perfect autumn dessert.
1 packet of ready roll short crust pastry
2 large cooking apples
1 cup of golden caster sugar
2tbsp ground cinnamon
Roll out the shortcrust pastry and cut out rounds big enough to fill your cupcake tray. One sheet of the Just Roll ready roll shortcrust pastry make around 8 apple pies.
To ensure your pastry is crisp you will need to blind bake your pastry cases. Line each case with greaseproof paper and fill with baking beans. Bake for approximately 15 minutes or until cases start to turn golden brown. Once golden remove from the oven and remove baking beans.
To seal the pastry cases brush with egg wash and then bake for a further 5 minutes.
Whilst the pastry is in the oven you can start on your apple filling. Peel and chop the apple into even sized chunks and place in a saucepan. Add to the pan water, sugar and cinnamon then turn on heat.
Allow the apple mixture to simmer until the apples are completely soft.
These apples pies are best enjoyed hot, served with whipped cream or even a scoop of vanilla ice cream.
