Teddy's Picnic Bake Box

July's Bake Box is here and it's time to plan a picnic! As a child I used to love days out with a home made picnic, enjoying all the tasty treats, whilst soaking in the sunshine. This box is perfect for making some delicious treats of my own and I think I will have to plan a picnic to relive some childhood memories.

In this months box there is yet again a great variety of baking tools. The largest item is a really cute teddy bear cake mould made from the Bake Box's signature high quality silicon material. Also in the box are some cookie cutters, icing stencils, recipe cards, yellow food colouring gel and finally a lattice pastry cutter.

Time to test a recipe!
I usually go for sweet bakes but this time I fancied doing something a little different so I went for the mini lattice rolls recipe. I have changed the recipe a little from the one on the recipe card making it a cheats alternative. So if you like to bake but want something super quick and easy check out my recipe below.

Quick & Easy Chilli Rolls
1 pack of ready rolled puff pastry
1 pack of sausage mince
2tsp salt
2tsp pepper
4tsp dried chillies - I ground mine up
2tsp garlic Granules

In a bowl mix together the sausage meat, salt, pepper, chilli and garlic granules, evenly distributing the seasonings throughout the sausage meat.

Cut the ready roll pastry in half so that you have a top and bottom section. Use the lattice roller to create a lattice effect on one half of the pasty, this will be the top half.

Top tip: press lightly with the roller for lightly textured effect or press firmly to cut through the pastry and form separated lattice pattern.

Split the sausage meat mixture in half a then lay out on the base side of the pastry.

Place the top layer of pastry over the sausage meat and then press down the edges with a folk. Cut the sausage rolls up into whatever size you would like them to be. I cut mine into bitesize pieces. Place the rolls on a baking tray, brush with egg wash and bake on 180c for 20mins or until golden brown.

And volia! Delicious sausage rolls, either eat straight from the oven or allow to cool and take on a picnic with you.
