Simple hidden vegetable pasta sauce

This is a really simple pasta sauce great for adding extra vegetables if you struggle to eat your 5 a day. This sauce is super healthy and can be used as a base sauce for bolognese or just eaten on it's own with pasta. Easy to throw together you can make this is bulk and freeze down into individual portions.

To make this simple sauce you will need:
1 jar of passata or tinned tomatoes if you don't have passata
2 tsp of oil (I used olive but coconut oil would also be good)
1 onion
2 cloves of garlic (add more or less to your taste)
4 celery sticks
3 carrots
1 pepper (I used yellow but any would work)
1 stock cube or stock pot
Seasoning to taste

I prepare all my ingredients before I start to cook this sauce. With this recipe it is best to finely chop all the ingredients so they are in similar sized pieces. It is easy to grate the carrots then chop then, so I do this to speed up the process.

1. Start the sauce by heating the oil in the pan and then gently soften the onion and garlic.
2. Once softened add the celery, carrots and peppers, soften for around 5 minutes.
3. I like to add seasonings as I go along so now is the time to add salt and pepper.
4. Next add the passata and simmer for a further 5 minutes.
5. Add the stock pot, these are the easiest to use as they can be added directly to sauce.
6. Now everything has been added cover pan with a lid and allow to gently simmer for 15 minutes.
7. This is an optional step but it can be nice to add extra flavours such as herbs, chilli or even worcester sauce.

If you don't like chunky sauces or are making it for kids, simply allow the sauce to cool and then blend in a food processor until smooth.
